We can all get a bit fed up with courgettes in the summer as they are just so productive they are the vegetable that keeps giving. But for us there is almost nothing you can’t do with a courgette. We have them raw, chopped into a salad, sliced and grilled on the BBQ until they are close to burnt, slow cooked in the oven with a generous amount of olive oil and garlic, deep fried, and even in a cake.
